Instructions
- Place the sugar cookies in a food processor and pulse until fine crumbs form. If you do not have a food processor, place them in a sturdy zip-top bag and crush them thoroughly with a rolling pin.
- Transfer the cookie crumbs to a medium bowl. Add the softened cream cheese.
- Mix the crumbs and cream cheese together using a hand mixer or a sturdy spoon until a uniform dough forms.
- Roll the dough into small balls, about 1 inch in diameter. Place the balls on a baking sheet lined with parchment paper.
- Freeze the cookie balls for at least 30 minutes to firm them up. This prevents them from falling apart during dipping.
- In a microwave-safe bowl, melt the white chocolate wafers according to package directions, stirring every 30 seconds. If using, stir in the coconut oil for a thinner consistency.
- Dip each frozen cookie ball into the melted white chocolate, ensuring it is fully coated. Use a fork or a dipping tool to lift it out, allowing excess chocolate to drip off.
- Return the coated truffles to the parchment-lined baking sheet.
- Refrigerate the truffles for at least 1 hour, or until the chocolate coating is completely set.
