- 1/2 lb rice vermicelli noodles
- 8 oz fresh rice paper wrappers
- 1 cup shredded lettuce
- 1 cup chopped fresh mint leaves
- 1 cup chopped fresh cilantro leaves
- 1 cup thinly sliced cucumber
- 1 cup thinly sliced carrots
- 1/2 lb cooked shrimp, halved lengthwise (optional)
- 1/2 lb cooked chicken or pork, thinly sliced (optional)
- For the Peanut Sauce:
- 1/2 cup smooth peanut butter
- 1/4 cup warm water
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp honey or maple syrup
- 1 clove garlic, minced
- 1 tsp grated fresh ginger
- 1/2 tsp sriracha or chili garlic sauce (optional)
Instructions
- Cook rice vermicelli noodles according to package directions. Drain and rinse with cold water.
- Prepare the peanut sauce: In a bowl, whisk together peanut butter, warm water, soy sauce, rice vinegar, honey, minced garlic, grated ginger, and sriracha (if using) until smooth.
- To assemble the rolls: Dip one rice paper wrapper in warm water for about 15-20 seconds, until pliable.
- Lay the wrapper flat on a clean surface.
- Arrange a small amount of lettuce, mint, cilantro, cucumber, carrots, and your choice of protein (shrimp, chicken, or pork) on the lower third of the wrapper.
- Fold the bottom edge of the wrapper over the filling.
- Fold in the sides.
- Roll up tightly from the bottom.
- Repeat with remaining wrappers and filling.
- Serve immediately with the peanut sauce for dipping.
Notes
- For a vegetarian option, omit the shrimp and meat, and add extra vegetables or firm tofu.
- Adjust the sweetness and spice of the peanut sauce to your preference.
- If the rice paper is too sticky, you can lightly dampen your fingers with water.
