Ingredients

  • 1/2 lb rice vermicelli noodles
  • 8 oz fresh rice paper wrappers
  • 1 cup shredded lettuce
  • 1 cup chopped fresh mint leaves
  • 1 cup chopped fresh cilantro leaves
  • 1 cup thinly sliced cucumber
  • 1 cup thinly sliced carrots
  • 1/2 lb cooked shrimp, halved lengthwise (optional)
  • 1/2 lb cooked chicken or pork, thinly sliced (optional)
  • For the Peanut Sauce:
  • 1/2 cup smooth peanut butter
  • 1/4 cup warm water
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey or maple syrup
  • 1 clove garlic, minced
  • 1 tsp grated fresh ginger
  • 1/2 tsp sriracha or chili garlic sauce (optional)


Instructions

  1. Cook rice vermicelli noodles according to package directions. Drain and rinse with cold water.
  2. Prepare the peanut sauce: In a bowl, whisk together peanut butter, warm water, soy sauce, rice vinegar, honey, minced garlic, grated ginger, and sriracha (if using) until smooth.
  3. To assemble the rolls: Dip one rice paper wrapper in warm water for about 15-20 seconds, until pliable.
  4. Lay the wrapper flat on a clean surface.
  5. Arrange a small amount of lettuce, mint, cilantro, cucumber, carrots, and your choice of protein (shrimp, chicken, or pork) on the lower third of the wrapper.
  6. Fold the bottom edge of the wrapper over the filling.
  7. Fold in the sides.
  8. Roll up tightly from the bottom.
  9. Repeat with remaining wrappers and filling.
  10. Serve immediately with the peanut sauce for dipping.

Notes

  • For a vegetarian option, omit the shrimp and meat, and add extra vegetables or firm tofu.
  • Adjust the sweetness and spice of the peanut sauce to your preference.
  • If the rice paper is too sticky, you can lightly dampen your fingers with water.
