- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 5 ounces fresh spinach
- 1/4 cup grated Parmesan cheese (optional)
- Salt and black pepper to taste
Instructions
- Cook pasta according to package directions. Reserve about 1/2 cup of pasta water before draining.
- While pasta is cooking, heat olive oil in a large skillet over medium heat.
- Add minced garlic and cook until fragrant, about 1 minute.
- Stir in chopped sun-dried tomatoes and cook for another minute.
- Add fresh spinach to the skillet, a handful at a time, stirring until it wilts.
- Add the drained pasta to the skillet.
- Toss everything together, adding a splash of reserved pasta water if needed to create a light sauce.
- Stir in Parmesan cheese, if using.
- Season with salt and black pepper to taste.
- Serve immediately.

- For a richer flavor, you can use oil-packed sun-dried tomatoes.
