A recipe for preparing flavorful shrimp skewers coated in a creamy, spicy, and sweet chili sauce, cooked perfectly on the grill.

- 1.5 lbs large shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 lime, zested and juiced
- 8 wooden skewers, soaked in water for 30 minutes
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 2 tablespoons sriracha or hot sauce (adjust to your spice preference)
- 1 teaspoon rice vinegar
- 1 clove garlic, minced
Instructions
- Prepare the shrimp: Pat the peeled and deveined shrimp dry with paper towels. Toss them in a bowl with olive oil, salt, and pepper.
- Make the sauce: In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, rice vinegar, minced garlic, and the zest of one lime. Set aside half of the sauce for dipping or drizzling later.
- Marinate (optional): Toss the seasoned shrimp with half of the remaining sauce mixture. Let it sit for 10 minutes while you prepare the grill. Do not marinate for longer than 20 minutes as the acid can affect the texture.
- Skewer the shrimp: Thread 4 to 5 shrimp onto each soaked wooden skewer, piercing them near the tail and the head end.
- Preheat the grill: Heat your outdoor grill or grill pan to medium-high heat (about 400°F or 200°C). Lightly oil the grates to prevent sticking.
- Grill the skewers: Place the skewers on the hot grill. Cook for 2 to 3 minutes per side until the shrimp are pink and opaque.
- Glaze: During the last minute of cooking, brush the shrimp lightly with the remaining sauce mixture from the bowl (the part used for marinating).
- Finish: Remove the skewers from the grill. Squeeze fresh lime juice over the hot skewers.
- Serve immediately with the reserved sauce on the side for dipping.
Notes
- Soaking wooden skewers prevents them from burning on the grill.
- For extra flavor, you can toss the cooked shrimp with a small amount of fresh cilantro before serving.
- If you prefer a thinner glaze, add a teaspoon of water or lime juice to the reserved sauce.
