Description

Make these easy Sweet Corn and Zucchini Fritters. They are a wonderful way to enjoy fresh, seasonal produce. This recipe keeps the steps simple so you can get these delicious fritters on your plate fast. They are perfect for a quick snack or a light side dish.

Ingredients

Scale
  • 1 cup fresh or frozen sweet corn kernels
  • 1 medium zucchini, grated and squeezed dry
  • 1/2 cup all-purpose flour
  • 1 large egg, lightly beaten
  • 1/4 cup milk
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Vegetable oil, for frying

Instructions

  1. Place the grated zucchini in a clean kitchen towel or paper towels. Squeeze out as much liquid as possible. This step keeps your fritters crispy.
  2. In a medium bowl, combine the flour, baking powder, salt, and pepper. Whisk these dry ingredients together.
  3. In a separate small bowl, whisk the egg and milk together.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  5. Gently fold in the sweet corn kernels and the squeezed zucchini until evenly distributed in the batter.
  6. Pour about 1/2 inch of vegetable oil into a large skillet and heat over medium heat until the oil shimmers (about 350°F).
  7. Carefully drop spoonfuls of the batter into the hot oil. Flatten them slightly with the back of the spoon. Work in batches to avoid overcrowding the pan.
  8. Fry for 2 to 3 minutes per side, until they are golden brown and cooked through.
  9. Remove the fritters from the oil using a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
  10. Serve your fritters warm.

Notes

  • Squeezing the water from the zucchini is key for crispy fritters.
  • If you like a little heat, add a pinch of cayenne pepper to the dry ingredients.
  • These are best eaten right away, fresh from the pan.
