Description

Enjoy these hearty and flavorful Sweet Potato & Black Bean Enchiladas, a perfect vegetarian meal that’s both comforting and easy to make. They’re filled with roasted sweet potatoes and black beans, rolled in tortillas, and topped with a delicious sauce.


Ingredients

  • 1 large sweet potato, peeled and diced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup chopped red onion
  • 1 tablespoon lime juice
  • 8 corn tortillas
  • 1 (10 ounce) can enchilada sauce
  • 1 cup shredded Monterey Jack cheese


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the diced sweet potato with olive oil, chili powder, cumin, and salt on a baking sheet. Roast for 20-25 minutes, or until tender.
  3. In a bowl, combine the roasted sweet potato, black beans, cilantro, red onion, and lime juice. Mix well.
  4. Warm the tortillas slightly to make them pliable. You can do this by wrapping them in a damp paper towel and microwaving for 30 seconds, or by warming them gently in a dry skillet.
  5. Spoon the sweet potato and black bean mixture into the center of each tortilla and roll them up.
  6. Pour about half of the enchilada sauce into the bottom of a 9×13 inch baking dish.
  7. Arrange the rolled enchiladas seam-side down in the baking dish.
  8. Pour the remaining enchilada sauce over the enchiladas and sprinkle with shredded cheese.
  9. Bake for 15-20 minutes, or until the cheese is melted and bubbly.

Notes

  • For a spicier kick, add a pinch of cayenne pepper to the sweet potato mixture.
  • Serve with your favorite toppings like sour cream, avocado, or extra cilantro.
  • If you prefer a different cheese, cheddar or a Mexican blend works well too.
