- 2 large eggs

Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the diced sweet potato to the skillet. Cook for 8-10 minutes, stirring occasionally, until the potatoes start to soften and brown.
- Add the diced onion and bell pepper to the skillet. Continue cooking for another 5 minutes, until the vegetables are tender.
- If using, stir in the cooked sausage or black beans. Season the hash with salt and pepper.
- Create two small wells in the hash mixture. Crack one egg into each well.
- Cover the skillet and cook for 3-5 minutes, or until the egg whites are set and the yolks reach your desired doneness.
