- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper
- 1/2 cup chopped cooked sausage or bacon (optional)
- 2 large eggs
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add sweet potato, onion, and bell pepper. Cook until sweet potato is tender, about 10-15 minutes.
- If using, add cooked sausage or bacon to the skillet.
- Make two wells in the hash and crack an egg into each well.
- Cover and cook until egg whites are set and yolks are cooked to your liking, about 5-7 minutes.
- Season with salt and pepper.
