Ingredients

  • 1/2 cup chopped bell pepper
  • 1/2 cup chopped cooked sausage or bacon (optional)
  • 2 large eggs
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add sweet potato, onion, and bell pepper. Cook until sweet potato is tender, about 10-15 minutes.
  3. If using, add cooked sausage or bacon to the skillet.
  4. Make two wells in the hash and crack an egg into each well.
  5. Cover and cook until egg whites are set and yolks are cooked to your liking, about 5-7 minutes.
