Ingredients

  • 1 tablespoon coconut oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 large sweet potato, peeled and diced
  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 1 (14-ounce) can diced tomatoes, undrained
  • 1 (13.5-ounce) can full-fat coconut milk
  • 1/2 cup vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Cooked rice or naan, for serving


Instructions

  1. Heat the coconut oil in a large pot or Dutch oven over medium heat.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Stir in the garlic and ginger. Cook for 1 minute until fragrant.
  4. Add the cumin, coriander, turmeric, and cayenne pepper. Cook for 30 seconds, stirring constantly.
  5. Add the diced sweet potato, chickpeas, diced tomatoes, coconut milk, and vegetable broth.
  6. Bring the mixture to a simmer. Reduce the heat to low, cover, and cook for 15-20 minutes, or until the sweet potatoes are tender.
  7. Remove the lid for the last 5 minutes if you prefer a thicker sauce.
  8. Season with salt and pepper to your liking.
  9. Serve hot over rice or with naan bread. Garnish with fresh cilantro.

  • This curry tastes even better the next day.
  • You can adjust the cayenne pepper amount based on how much heat you enjoy.
  • For a thicker curry, mash a few pieces of sweet potato against the side of the pot.
