Description

Make taco night exciting with these Taco Stuffed Sweet Potatoes. They offer a flavorful, comforting alternative to standard tacos, packed with your favorite toppings. This recipe brings family memories right to your dinner table with simple steps.

Ingredients

Scale
  • 4 medium sweet potatoes
  • 1 pound ground turkey or beef
  • 1 tablespoon olive oil
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 cup shredded cheddar cheese (or preferred cheese)
  • Toppings: salsa, sour cream, chopped cilantro, avocado slices

Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C).
  2. Prick the sweet potatoes several times with a fork. Bake directly on the oven rack for 45 to 60 minutes, or until tender when squeezed.
  3. While potatoes bake, brown the ground meat in a skillet over medium heat. Drain off any excess fat.
  4. Stir the taco seasoning and water into the cooked meat. Bring to a simmer and cook until the liquid reduces slightly, about 5 minutes.
  5. Once the sweet potatoes are done, carefully slice them open lengthwise. Fluff the insides gently with a fork.
  6. Spoon the seasoned taco meat mixture evenly into each sweet potato.
  7. Top generously with shredded cheese. Return the potatoes to the oven for 3-5 minutes, until the cheese is melted and bubbly.
  8. Remove from the oven. Add your favorite toppings like salsa, a dollop of sour cream, cilantro, and avocado slices before serving.

Notes

  • For a quicker cook time, microwave the sweet potatoes until almost tender, then finish them in the oven with the toppings.
  • Feel free to use black beans or lentils instead of meat for a vegetarian option.
  • Make the taco meat ahead of time to save time on busy weeknights.
