Description

A classic baked Key Lime Pie with a tangy filling and graham cracker crust.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 4 large egg yolks
  • 1 (14 ounce) can sweetened condensed milk
  • 1/2 cup fresh key lime juice
  • 1 teaspoon key lime zest (optional)


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Press mixture firmly into the bottom and up the sides of a 9-inch pie plate.
  3. Bake crust for 8-10 minutes, or until lightly browned. Remove from oven and let cool.
  4. In a medium bowl, whisk together egg yolks, sweetened condensed milk, key lime juice, and zest (if using) until smooth.
  5. Pour filling into the cooled crust.
  6. Bake for 15-20 minutes, or until the center is just set.
  7. Let pie cool completely on a wire rack, then refrigerate for at least 2 hours before serving.

Notes

  • For best results, use fresh key limes.
  • You can substitute regular lime juice if key limes are not available, but the flavor will be slightly different.
  • Whip cream or meringue can be used as a topping.
