Instructions
- Cook noodles according to package directions. Drain and set aside.
- While noodles cook, whisk together peanut butter, soy sauce, rice vinegar, honey or maple syrup, sesame oil, ginger, garlic, and sriracha in a medium bowl.
- Gradually whisk in the hot water until the sauce is smooth and reaches your desired consistency.
- In a large bowl, combine the cooked noodles and the peanut sauce. Toss well to coat everything evenly.
- Stir in any desired vegetables like carrots, bell peppers, and green onions.
- Serve immediately. Garnish with chopped peanuts and fresh cilantro if you like.
