Description

Enjoy this rich Triple Chocolate Chunk Zucchini Bread, a moist and delicious bakery-style loaf perfect for any occasion. It’s an easy recipe that delivers big on chocolate flavor and tender texture.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 3 large eggs
  • 1 1/2 cups granulated sugar
  • 1 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 cups grated zucchini (about 2 medium zucchini, unpeeled)
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup milk chocolate chunks
  • 1/2 cup dark chocolate chunks

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan, or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, salt, baking powder, cinnamon, and nutmeg.
  3. In a large bowl, whisk together the eggs, granulated sugar, vegetable oil, and vanilla extract until well combined.
  4. Stir the grated zucchini into the wet ingredients until evenly distributed.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  6. Gently fold in the semi-sweet chocolate chips, milk chocolate chunks, and dark chocolate chunks.
  7. Pour the batter into the prepared loaf pan and spread evenly.
  8. Bake for 50-65 minutes, or until a wooden skewer inserted into the center comes out clean. If the top begins to brown too quickly, you can loosely tent it with aluminum foil.
  9. Let the bread cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.
  10. Slice and enjoy!

Notes

  • Ensure your zucchini is well-drained to avoid a watery batter. Squeeze out excess moisture using paper towels or a clean kitchen towel.
  • For an extra chocolatey boost, you can add an extra 1/4 cup of chocolate chips to the batter.
  • This bread is delicious served warm or at room temperature.
  • Store any leftover bread in an airtight container at room temperature for up to 3 days.
