Description
Learn how to cook restaurant-quality tuna steaks quickly using a cast iron skillet, finished with a simple garlic herb butter.
Ingredients
Scale
- 2 (6-ounce) tuna steaks (ahi or yellowfin)
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon fresh thyme leaves
Instructions
- Pat the tuna steaks completely dry with paper towels. Season both sides evenly with salt and pepper.
- Place a cast iron skillet over high heat until very hot, about 3 to 5 minutes. Add the olive oil.
- Carefully place the tuna steaks in the hot skillet. Sear for 1.5 to 2 minutes per side for rare (cool red center). Adjust time for your desired doneness.
- Remove the tuna steaks from the skillet and set them aside on a plate. Cover loosely with foil to rest.
- Reduce the heat to medium-low. Add the butter to the same skillet. Let it melt.
- Add the minced garlic, parsley, and thyme to the melted butter. Cook for about 30 seconds until fragrant, stirring constantly. Do not let the garlic burn.
- Spoon the garlic herb butter over the rested tuna steaks before serving.
Notes
- For a blackened crust, mix the salt and pepper with 1 teaspoon of paprika and 1/2 teaspoon of cayenne pepper and rub onto the steaks before searing.
- If you prefer a soy-ginger flavor, marinate the steaks for 10 minutes in 2 tablespoons soy sauce, 1 teaspoon grated ginger, and 1 teaspoon sesame oil before cooking.
- Serve with a side of steamed asparagus or a simple cucumber salad.
