Transform your leftover turkey into a gourmet sandwich with this easy Turkey Cranberry Brie Panini. It’s a delicious way to enjoy holiday flavors any time of year.

- 2 slices of bread
- 1/4 cup leftover cooked turkey, sliced
- 2 ounces Brie cheese, sliced
- 2 tablespoons cranberry sauce
- 1 tablespoon butter
Instructions
- Butter one side of each slice of bread.
- Place one slice of bread, butter-side down, in a non-stick skillet over medium heat.
- Layer the turkey and Brie cheese on the bread in the skillet.
- Spread the cranberry sauce over the Brie.
- Top with the other slice of bread, butter-side up.
- Grill for 3-5 minutes per side, or until the bread is golden brown and the cheese is melted and gooey.
- Slice in half and serve immediately.
Notes
- You can use any type of bread you like. Sourdough or a hearty whole wheat works well.
- If you don’t have cranberry sauce, cranberry jelly or preserves can be substituted.
- For an extra touch, add a thin layer of mayonnaise to the inside of the bread slices before assembling.
