- 1 cup cooked chickpeas, rinsed and drained
- 1/2 cup plain Greek yogurt (or dairy-free alternative)
- 1/4 cup chopped cucumber
- 1 tablespoon fresh dill, chopped
- 1 teaspoon lemon juice
- 1 clove garlic, minced
- Salt and pepper to taste
- 2 cups mixed greens (spinach, romaine, or spring mix)
- 1/2 cup chopped cherry tomatoes
- 1/4 cup sliced red onion
- 1/4 cup crumbled feta cheese (optional)
- 2 tablespoons olive oil
Instructions
- Prepare the Tzatziki sauce: In a small bowl, combine the Greek yogurt, chopped cucumber, dill, lemon juice, and minced garlic. Season with salt and pepper. Stir well.
- In a separate bowl, toss the cooked chickpeas with 1 tablespoon of olive oil, a pinch of salt, and pepper.
- Assemble your bowl: Place the mixed greens in the bottom of your serving bowl.
- Arrange the chickpeas, cherry tomatoes, and sliced red onion over the greens.
- Spoon generous amounts of the prepared Tzatziki sauce over the ingredients.
- Sprinkle with feta cheese, if using.
- Drizzle the remaining 1 tablespoon of olive oil over the bowl just before serving.
Notes
- You can roast the chickpeas instead of just draining them for a warmer bowl.
- Make the Tzatziki sauce ahead of time; it tastes even better after chilling for an hour.
- Feel free to add other fresh vegetables like bell peppers or olives.
- This recipe is easily made vegan by using a non-dairy yogurt for the Tzatziki.
