Ingredients

  • ½ cup non-dairy milk (such as almond or soy milk)
  • â…“ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 tablespoon ground flaxseed meal mixed with 3 tablespoons water (flax egg)


Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin pan with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking soda, and salt.
  3. In a separate medium bowl, combine the mashed bananas, non-dairy milk, vegetable oil, vanilla extract, and the flax egg. Mix well.
  4. Pour the wet ingredients into the dry ingredients. Stir until just combined. Do not overmix; a few lumps are fine.
  5. Divide the batter evenly among the 12 muffin cups.
  6. Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
