- Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease it.
- In a large bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon. Stir in the chopped nuts if you are using them.
- In a separate bowl, combine the mashed bananas, sugar, oil, plant-based milk, and vanilla extract. Mix well.
- Pour the wet ingredients into the dry ingredients. Fold them together gently until just combined. Do not overmix; a few lumps are fine.
- Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.
- Bake for 18 to 22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

- The riper your bananas are, the sweeter and moister your muffins will be.
- You can substitute applesauce for the oil for a lower-fat option, but the texture will be slightly different.
