Instructions

  1. Preheat your oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners or grease it well.
  2. In a small bowl, combine the ground flaxseed meal and warm water. Stir well and let it sit for 5-10 minutes, until it thickens and forms a gel-like consistency. This is your ‘flax egg’.
  3. In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  4. In a separate medium bowl, whisk together the non-dairy milk, vegetable oil, vanilla extract, and the prepared flax egg.
  5. Pour the wet ingredients into the dry ingredients. Stir gently with a spoon or spatula until just combined. Be careful not to overmix; a few lumps are fine.
  6. Fold in the vegan chocolate chips until evenly distributed.
  7. Divide the batter evenly among the 12 muffin cups. Fill each cup about two-thirds full.
