  • 1 tablespoon apple cider vinegar
  • 1 cup vegan chocolate chips


Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it well.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, cream together the softened vegan butter and granulated sugar until light and fluffy.
  4. Beat in the applesauce and vanilla extract until well combined.
  5. In a small bowl or measuring cup, combine the non-dairy milk and apple cider vinegar. Let it sit for a few minutes to curdle slightly. This creates a vegan ‘buttermilk’.
  6. Gradually add the wet ingredients (non-dairy milk mixture and applesauce mixture) to the dry ingredients, alternating between them. Mix until just combined. Be careful not to overmix.
  7. Gently fold in the vegan chocolate chips.
  8. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  9. Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  10. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For an extra boost of flavor, you can add a pinch of cinnamon to the dry ingredients.
