Description

A moist, bright, and simple vegan cake made with olive oil and fresh lemon flavor, finished with a light glaze.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup good quality extra virgin olive oil
  • 1/2 cup unsweetened plant milk (soy or almond recommended)
  • 1/4 cup fresh lemon juice
  • 2 teaspoons lemon zest
  • 1 teaspoon vanilla extract
  • 1 tablespoon apple cider vinegar
  • 1/2 cup powdered sugar (for glaze)
  • 2 tablespoons fresh lemon juice (for glaze)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
  3. In a large bowl, whisk together the granulated sugar and olive oil until combined.
  4. Add the plant milk, lemon juice, lemon zest, and vanilla extract to the oil mixture. Whisk well.
  5. Pour the dry ingredients into the wet ingredients. Mix gently with a spatula until just combined; do not overmix.
  6. Stir in the apple cider vinegar quickly. The batter may slightly bubble.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 45 to 55 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool in the pan for 15 minutes before inverting it onto a wire rack to cool completely.
  10. While the cake cools, prepare the glaze: Whisk the powdered sugar and 2 tablespoons of lemon juice until smooth.
  11. Drizzle the glaze over the cooled cake before slicing and serving.

Notes

  • Use a mild or light-flavored olive oil if you prefer a less intense olive flavor in your cake.
  • For a gluten-free option, substitute the all-purpose flour with a 1-to-1 gluten-free baking blend.
  • You can substitute the apple cider vinegar with white vinegar.
