  • 1 cup raw cashews, soaked in hot water for at least 30 minutes
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 1/2 cup unsweetened non-dairy milk (such as almond or soy
  • 1/4 cup nutritional yeast
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper, or to taste
  • Pinch of nutmeg (optional)
  • Fresh parsley, chopped, for garnish (optional)


Instructions

  1. Cook pasta according to package directions. Reserve about 1 cup of pasta water before draining.
  2. While pasta cooks, drain the soaked cashews.
  3. In a blender, combine the drained cashews, pumpkin puree, non-dairy milk, nutritional yeast, minced garlic, lemon juice, salt, pepper, and nutmeg (if using).
  4. Blend until the sauce is completely smooth and creamy. If the sauce is too thick, add a tablespoon of non-dairy milk or reserved pasta water at a time until desired consistency is reached.
  5. Drain the cooked pasta and return it to the pot.
  6. Pour the pumpkin alfredo sauce over the hot pasta.
  7. Toss well to coat the pasta evenly. If the sauce seems too thick, add a little of the reserved pasta water to loosen it up.
  8. Serve immediately, garnished with fresh parsley if desired.

Notes

  • For a nut-free option, you can try using soaked sunflower seeds or silken tofu instead of cashews.
  • Adjust the seasoning to your preference. You can add more garlic, lemon juice, or spices as needed.
  • This sauce is also delicious served over roasted vegetables or as a dip.
