  • 2 cups fresh spinach
  • Salt to taste
  • Fresh cilantro, chopped, for garnish


Instructions

  1. Heat coconut oil in a large pot or Dutch oven over medium heat. Add chopped onion and cook until softened, about 5-7 minutes.
  2. Add minced garlic and grated ginger. Cook for 1 minute until fragrant.
  3. Stir in curry powder, ground cumin, ground turmeric, and cayenne pepper (if using). Cook for 30 seconds, stirring constantly, until fragrant.
  4. Pour in pumpkin puree, full-fat coconut milk, and vegetable broth. Stir well to combine. Bring the mixture to a gentle simmer.
  5. Add rinsed and drained chickpeas to the pot. Reduce heat to low, cover, and simmer for 15-20 minutes, allowing the flavors to meld and the curry to thicken slightly.
  6. Stir in fresh spinach and cook until wilted, about 2-3 minutes.
  7. Taste and adjust seasoning with salt as needed.
  8. Serve hot, garnished with fresh cilantro.
