  • 1/4 cup nutritional yeast
  • 1 tablespoon cornstarch
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup breadcrumbs (ensure vegan)
  • 2 tablespoons vegan butter, melted


Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  3. Add the minced garlic and cook for 1 minute more until fragrant.
  4. Stir in the sliced yellow squash. Cook for about 5-7 minutes, until the squash is slightly tender.
  5. In a small bowl, whisk together the non-dairy milk, vegan shredded cheese, nutritional yeast, cornstarch, salt, and pepper until smooth.
