Instructions

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it well.
  2. Prepare the flax egg by mixing ground flaxseed and water in a small bowl. Let it sit for 5 minutes until thickened.
  3. In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
  4. In a separate medium bowl, whisk together the melted oil, granulated sugar, brown sugar, non-dairy milk, vanilla extract, and the prepared flax egg.
  5. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
