Enjoy a vibrant and flavorful Vegetable Stir-Fry with a creamy peanut sauce. This easy vegan dinner highlights fresh mixed vegetables, making it a healthy and satisfying meal.

Ingredients

Scale
  • 1 tablespoon sesame oil
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1 cup sliced bell peppers (any color)
  • 1 cup snap peas
  • 1/2 cup sliced onion
  • 2 cloves garlic, minced
  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon rice vinegar
  • 1 tablespoon maple syrup
  • 1/4 cup water (or more, to thin sauce)
  • Cooked rice or noodles, for serving
  • Optional garnishes: chopped peanuts, sesame seeds, cilantro

Instructions

  1. Heat sesame oil in a large skillet or wok over medium-high heat.
  2. Add broccoli, carrots, bell peppers, snap peas, and onion. Stir-fry for 5-7 minutes until vegetables are tender-crisp.
  3. Add minced garlic and cook for 1 minute more until fragrant.
  4. While vegetables cook, whisk together peanut butter, soy sauce, rice vinegar, maple syrup, and water in a small bowl until smooth. Add more water if needed to reach desired consistency.
  5. Pour the peanut sauce over the vegetables in the skillet.
  6. Toss to coat the vegetables evenly with the sauce. Cook for another 1-2 minutes until the sauce is heated through.
  7. Serve immediately over cooked rice or noodles.
  8. Garnish with chopped peanuts, sesame seeds, or cilantro, if desired.

Notes

  • Feel free to use any vegetables you have on hand.
  • Adjust the sweetness and saltiness of the sauce to your preference.
  • For a spicier sauce, add a pinch of red pepper flakes or a teaspoon of sriracha.
