Description

A hearty and comforting chicken pot pie packed with a variety of vegetables. This recipe is designed to be easy to make, perfect for a cozy family dinner.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup chopped yellow onion
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped broccoli florets
  • 1 cup frozen peas
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1/2 cup milk
  • 1 teaspoon dried thyme
  • 1/4 teaspoon poultry seasoning
  • 1 (14.1 ounce) package refrigerated pie crusts, or your favorite homemade crust
  • 1 large egg, beaten (for egg wash)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides. Remove chicken from skillet and set aside.
  3. Add onion, carrots, and celery to the same skillet. Cook until softened, about 5-7 minutes.
  4. Stir in broccoli florets and cook for another 3-4 minutes, until slightly tender.
  5. Return chicken to the skillet. Stir in peas, salt, and pepper.
  6. Sprinkle flour over the chicken and vegetables. Stir well and cook for 1 minute.
  7. Gradually whisk in chicken broth and milk. Bring the mixture to a simmer, stirring constantly, until the sauce thickens.
  8. Stir in thyme and poultry seasoning. Remove from heat.
  9. Line a 9-inch pie plate with one pie crust. Spoon the chicken and vegetable filling into the crust.
  10. Place the second pie crust over the filling. Crimp the edges to seal and cut several vents in the top crust with a knife.
  11. Brush the top crust with the beaten egg for a golden finish.
  12. Bake for 25-30 minutes, or until the crust is golden brown and the filling is bubbly.
  13. Let the pot pie cool for a few minutes before serving.

Notes

  • Feel free to swap out vegetables based on what you have on hand or prefer.
  • For an extra rich flavor, you can use heavy cream instead of milk.
  • If you don’t have refrigerated pie crusts, use your favorite homemade pie dough recipe.
