Ingredients

  • Potatoes, boiled and mashed: 2 medium
  • Peas, frozen: 1/2 cup
  • Onion, finely chopped: 1/4 cup
  • Ginger, grated: 1 teaspoon
  • Green chili, minced: 1/2 teaspoon (adjust to your taste)
  • Cumin seeds: 1/2 teaspoon
  • Coriander powder: 1 teaspoon
  • Turmeric powder: 1/4 teaspoon
  • Garam masala: 1/2 teaspoon
  • Salt: to taste
  • All-purpose flour (Maida): 1 cup
  • Oil or Ghee, for frying: As needed


Instructions

  1. Prepare the filling: In a pan, heat a little oil. Add cumin seeds. When they splutter, add the chopped onion and sauté until soft.
  2. Add the grated ginger and minced green chili. Cook for one minute.
  3. Stir in the coriander powder, turmeric powder, and garam masala. Cook the spices briefly.
  4. Add the mashed potatoes and frozen peas. Mix well. Season with salt. Cook for about 5 minutes until the mixture thickens slightly. Let the filling cool completely.
  5. Make the dough: In a bowl, mix the all-purpose flour with a pinch of salt. Add 2 tablespoons of oil or ghee and rub it into the flour until it resembles coarse crumbs.
  6. Slowly add cold water, a little at a time, and knead into a stiff, smooth dough. Cover and let it rest for 20 minutes.
  7. Shape the bites: Divide the dough into small balls. Roll each ball into a small circle (like a small puri).
  8. Place a spoonful of the cooled potato filling in the center of each circle.
  9. Fold the dough over the filling to create a half-moon or triangle shape, sealing the edges firmly. You can crimp the edges decoratively if you like.
  10. Heat oil for deep frying over medium heat.
  11. Carefully drop the samosa bites into the hot oil, making sure not to overcrowd the pan.
  12. Fry until they turn golden brown and crisp on all sides.
  13. Remove the bites with a slotted spoon and drain excess oil on paper towels.
  14. Serve your Veggie Samosa Bites warm with your favorite chutney.
