- 1 ripe mango, peeled and diced
- 1/2 cup finely chopped red onion
- 1/4 cup chopped fresh cilantro
- 1 jalapeño pepper, seeded and minced (optional)
- 2 tablespoons fresh lime juice
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- In a large bowl, combine the black beans, diced mango, chopped red onion, chopped cilantro, and minced jalapeño (if using).
- In a small bowl, whisk together the fresh lime juice, olive oil, salt, and black pepper.
- Pour the dressing over the salad ingredients and gently toss to combine.
- Serve immediately or chill in the refrigerator for at least 15 minutes to allow the flavors to meld.
Notes
- For a milder flavor, omit the jalapeño pepper.
- You can substitute canned corn for some of the black beans for added sweetness and texture.
