- 2 pounds new potatoes, washed and quartered

- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Boil potatoes: Place quartered potatoes in a large pot. Cover with cold water and add a pinch of salt. Bring to a boil, then reduce heat and simmer until tender, about 10-15 minutes.
- Make dressing: While potatoes cook, whisk together red onion, parsley, apple cider vinegar, olive oil, Dijon mustard, sugar, salt, and pepper in a medium bowl.
- Combine: Drain potatoes well. Immediately add hot potatoes to the dressing. Gently toss to coat.
- Serve: Serve warm.

- For extra flavor, add 2 slices cooked and crumbled bacon to the dressing.
