Ingredients

  • 2 pounds new potatoes, washed and quartered
  • 1/2 cup finely chopped red onion
  • 1/4 cup chopped fresh parsley
  • 1/4 cup apple cider vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Boil potatoes: Place quartered potatoes in a large pot. Cover with cold water and add a pinch of salt. Bring to a boil, then reduce heat and simmer until tender, about 10-15 minutes.
  2. Make dressing: While potatoes cook, whisk together red onion, parsley, apple cider vinegar, olive oil, Dijon mustard, sugar, salt, and pepper in a medium bowl.
  3. Combine: Drain potatoes well. Immediately add hot potatoes to the dressing. Gently toss to coat.
  4. Serve: Serve warm.

  • For extra flavor, add 2 slices cooked and crumbled bacon to the dressing.
