Instructions
- Cook quinoa: Combine quinoa and vegetable broth in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes, or until broth is absorbed.
- Fluff quinoa: Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork.
- Combine ingredients: In a large bowl, combine the cooked quinoa, dried cranberries, chopped nuts, and fresh parsley.
- Dress the salad: Whisk together olive oil and lemon juice. Pour over the quinoa mixture.
- Season: Season with salt and pepper to taste. Toss gently to combine.
