Description

Whip up a creamy and comforting White Chicken Enchilada Soup in just 30 minutes. This easy recipe brings all the delicious flavors of your favorite enchiladas into a hearty soup, perfect for a quick weeknight meal.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • 4 cups chicken broth
  • 2 cups shredded cooked chicken
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (10 ounce) can diced tomatoes with green chilies, undrained
  • 1 (4 ounce) can diced green chilies, undrained
  • 1 cup milk
  • 1/2 cup heavy cream
  • 1 cup shredded Monterey Jack cheese
  • Salt and freshly ground black pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro, crushed tortilla chips


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic, chili powder, cumin, oregano, and cayenne pepper (if using). Cook for 1 minute more, stirring constantly, until fragrant.
  3. Pour in chicken broth, shredded chicken, black beans, diced tomatoes with green chilies, and diced green chilies. Bring to a boil, then reduce heat and simmer for 10 minutes.
  4. Stir in milk and heavy cream. Heat through, but do not boil.
  5. Remove from heat and stir in Monterey Jack cheese until melted and smooth.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with your favorite toppings.

Notes

  • For a faster prep, use pre-cooked rotisserie chicken.
  • Adjust the cayenne pepper for your desired level of spice.
