Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it well.
  2. In a large bowl, whisk together the whole wheat flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate medium bowl, mash the ripe bananas. Stir in the applesauce, honey or maple syrup, vegetable oil, eggs, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients. Mix until just combined. Be careful not to overmix.
  5. Gently fold in the chopped walnuts or pecans.
  6. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
