Instructions

  1. Cook the pasta according to package directions until al dente. Drain and rinse immediately with cold water to stop the cooking process. Set aside to cool.
  2. While the pasta cools, prepare the dressing. In a small bowl or jar, whisk together the olive oil, red wine vinegar, Dijon mustard, oregano, garlic powder, salt, and pepper until well combined.
  3. In a large bowl, combine the cooled pasta, tomatoes, cucumber, olives, bell pepper, red onion, cheese, and meat (if using).
  4. Pour the prepared dressing over the pasta mixture.
  5. Toss everything gently until the pasta and vegetables are evenly coated with the dressing.
  6. Cover the bowl and refrigerate for at least 1 hour before serving. This allows the flavors to meld together.
