Description

Enjoy a light and flavorful Zesty Zoodle Chicken Alfredo that fits perfectly into your low-carb lifestyle. This recipe brings the comfort of Alfredo without the heavy carbs. Clara Kohn from 911Recipes shares this simple, family-approved dish perfect for a busy day.

Ingredients

Scale
  • 1 pound chicken breast, cut into bite-sized pieces
  • 2 large zucchinis, spiralized into zoodles
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chicken broth
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned and cooked through. Remove chicken and set aside.
  3. Add minced garlic to the same skillet and cook for about 30 seconds until fragrant.
  4. Pour in the heavy cream and chicken broth. Bring the mixture to a gentle simmer.
  5. Stir in the Parmesan cheese, lemon zest, and lemon juice. Continue stirring until the sauce thickens slightly.
  6. Add the cooked chicken back to the skillet.
  7. Add the zucchini noodles (zoodles) to the skillet. Toss gently to coat them in the sauce. Cook just until the zoodles are slightly tender, about 1-2 minutes. Do not overcook.
  8. Taste and adjust seasoning with more salt and pepper if needed.
  9. Serve immediately, garnished with fresh parsley.

Notes

  • You can substitute turkey breast for chicken if you prefer.
  • For a thicker sauce, simmer a minute longer or add a touch more Parmesan cheese.
  • Make sure not to cook the zoodles for too long; they should remain slightly crisp for the best texture.
  • This dish tastes best when served right away.
