Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. In a separate bowl, whisk together the granulated sugar, eggs, vegetable oil, and vanilla extract until well combined.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  5. Gently fold in the grated zucchini and 3/4 cup of the chopped pecans.
  6. Pour the batter into the prepared loaf pan and sprinkle the remaining 1/4 cup of pecans over the top.
