Easy-to-make zucchini crumble bars with a sweet and crumbly topping.
Ingredients

- 2 cups all-purpose flour
- 1 cup rolled oats
- 1 cup packed brown sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup cold butter, cut into pieces
- 3 cups grated zucchini, squeezed dry
- 1/2 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13 inch baking pan.
- In a large bowl, combine flour, oats, brown sugar, cinnamon, baking soda, and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Press half of the crumb mixture evenly into the bottom of the prepared baking pan.
- In a separate bowl, combine the grated zucchini, granulated sugar, cornstarch, and lemon juice. Spread this mixture evenly over the base in the pan.
- Crumble the remaining half of the crumb mixture over the zucchini layer.
- Bake for 30-35 minutes, or until the topping is golden brown and the filling is bubbly.
- Let cool completely in the pan before cutting into bars.
Notes
- Make sure to squeeze the excess moisture out of the grated zucchini for best results.
- Allow the bars to cool completely before cutting to ensure they hold their shape.
- These bars can be stored in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
