Warm, comforting baked oatmeal with apples and cinnamon.

- 2 cups rolled oats
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 large apple, peeled and diced
- 1/4 cup chopped nuts (optional)
- 1 large egg
- 1 3/4 cups milk
- 1/4 cup maple syrup or honey
- 2 tablespoons melted butter or coconut oil
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 375°F (190°C). Grease an 8×8 inch baking dish.
- In a large bowl, whisk together the oats, baking powder, cinnamon, nutmeg, and salt. Stir in the diced apple and nuts, if using.
- In a separate bowl, whisk together the egg, milk, maple syrup or honey, melted butter or coconut oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 30-35 minutes, or until the oatmeal is set and lightly golden brown around the edges.
- Let cool for a few minutes before serving.
Notes
- You can use any type of apple you like.
- Add other fruits like berries or pears.
- Top with extra nuts, yogurt, or a drizzle of maple syrup.
- Store leftovers in the refrigerator for up to 4 days. Reheat in the microwave or oven.
