Ingredients

  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 large apple, peeled and diced
  • 1/4 cup chopped nuts (optional)
  • 1 large egg
  • 1 3/4 cups milk
  • 1/4 cup maple syrup or honey
  • 2 tablespoons melted butter or coconut oil
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat oven to 375°F (190°C). Grease an 8×8 inch baking dish.
  2. In a large bowl, whisk together the oats, baking powder, cinnamon, nutmeg, and salt. Stir in the diced apple and nuts, if using.
  3. In a separate bowl, whisk together the egg, milk, maple syrup or honey, melted butter or coconut oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Pour the mixture into the prepared baking dish and spread evenly.
  6. Bake for 30-35 minutes, or until the oatmeal is set and lightly golden brown around the edges.
  7. Let cool for a few minutes before serving.

Notes

  • You can use any type of apple you like.
  • Add other fruits like berries or pears.
  • Top with extra nuts, yogurt, or a drizzle of maple syrup.
  • Store leftovers in the refrigerator for up to 4 days. Reheat in the microwave or oven.
