These apple pie cookies offer the delicious taste of apple pie in a convenient, bite-sized form. They feature small rounds of flaky pie crust filled with spiced apples, perfect for a sweet treat.

- 1 (14.1-ounce) package refrigerated pie crusts
- 1 cup finely chopped peeled Granny Smith apples (about 1 medium)
- 1/4 cup granulated sugar
- 1 tablespoon all-purpose flour
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon salt
- 1 large egg, lightly beaten
- 1 tablespoon coarse sugar
Instructions
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Unroll the pie crusts on a lightly floured surface. Use a 2 1/2-inch round cookie cutter to cut out 24 circles from the pie crusts. Reroll scraps as needed.
- In a medium bowl, combine the chopped apples, granulated sugar, flour, cinnamon, nutmeg, and salt. Mix well.
- Place 12 of the pie crust circles on the prepared baking sheet. Spoon about 1 tablespoon of the apple filling onto the center of each circle, leaving a small border.
- Top each filled circle with another pie crust circle. Gently press the edges together to seal, then crimp with a fork.
- Brush the tops of the cookies with the beaten egg and sprinkle with coarse sugar.
- Bake for 15-18 minutes, or until golden brown and the filling is bubbly.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

- You can use apple butter as a filling for a quicker option.
- For extra flavor, add a pinch of ground cloves or allspice to the apple filling.
