Description

Make these easy, no-bake treats that combine creamy peanut butter filling with crunchy graham crackers, all dipped in chocolate for a simple dessert.


Ingredients

  • 2 cups creamy peanut butter
  • 1 cup powdered sugar
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1 box (about 14 ounces) graham crackers, whole sheets
  • 12 ounces semi-sweet chocolate chips
  • 1 tablespoon shortening or coconut oil


Instructions

  1. In a medium bowl, beat together the peanut butter, powdered sugar, softened butter, and vanilla extract until smooth and creamy. This is your peanut butter filling.
  2. Take one graham cracker sheet and spread a generous layer of the peanut butter mixture on top.
  3. Place a second graham cracker sheet directly on top of the filling to create a sandwich. Gently press down.
  4. Repeat this process until all the filling is used, creating graham cracker sandwiches.
  5. Place the assembled sandwiches on a baking sheet lined with parchment paper. Freeze for at least 30 minutes to firm up the filling.
  6. In a microwave-safe bowl, combine the chocolate chips and shortening or coconut oil. Microwave in 30-second intervals, stirring well after each interval, until the chocolate is completely melted and smooth.
  7. Remove the chilled sandwiches from the freezer. Dip each sandwich halfway into the melted chocolate, allowing excess chocolate to drip off.
  8. Place the chocolate-dipped sandwiches back onto the parchment-lined sheet.
  9. Refrigerate the Buckeye Graham Crackers for about 15 minutes, or until the chocolate is set.

Notes

  • For a cleaner dip, use a fork to lower the sandwich into the chocolate and then lift it out, tapping the fork gently on the side of the bowl to remove extra chocolate.
  • You can use milk chocolate or dark chocolate instead of semi-sweet, depending on your preference.
  • Store leftovers in an airtight container in the refrigerator for up to one week.
