Description

This egg roll in a bowl recipe gives you all the delicious flavors of a classic egg roll without the wrapper. It is a quick and easy stir-fry combining ground pork or turkey with shredded cabbage for a satisfying, low-carb meal.

Ingredients

Scale
  • 1 tablespoon sesame oil
  • 1 pound ground pork or turkey
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 (16 ounce) bag coleslaw mix
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sriracha (optional, for a little heat)
  • Green onions, sliced, for garnish
  • Sesame seeds, for garnish

Instructions

  1. Heat sesame oil in a large skillet or wok over medium-high heat.
  2. Add ground pork or turkey and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat.
  3. Stir in chopped onion, minced garlic, and grated ginger. Cook for 3-5 minutes, until the onion softens and becomes fragrant.
  4. Add the coleslaw mix to the skillet. Cook, stirring frequently, until the cabbage wilts and becomes tender-crisp, about 5-7 minutes.
  5. Pour in the soy sauce, rice vinegar, and sriracha (if using). Stir well to combine all ingredients.
  6. Cook for another 1-2 minutes, allowing the flavors to meld.
  7. Remove from heat. Serve hot, garnished with sliced green onions and sesame seeds.

Notes

  • You can use ground chicken or beef instead of pork or turkey.
  • Adjust the amount of sriracha to your spice preference.
  • For extra vegetables, add shredded carrots or bell peppers with the coleslaw mix.
  • This dish is great for meal prep and reheats well.
