- 1 pound ground pork or turkey
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 (16 ounce) bag coleslaw mix
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon rice vinegar
- 1 teaspoon sriracha (optional, for a little heat)
- Green onions, sliced, for garnish
- Sesame seeds, for garnish
Instructions
- Heat sesame oil in a large skillet or wok over medium-high heat.
- Add ground pork or turkey and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat.
- Stir in chopped onion, minced garlic, and grated ginger. Cook for 3-5 minutes, until the onion softens and becomes fragrant.
- Add the coleslaw mix to the skillet. Cook, stirring frequently, until the cabbage wilts and becomes tender-crisp, about 5-7 minutes.
- Pour in the soy sauce, rice vinegar, and sriracha (if using). Stir well to combine all ingredients.
- Cook for another 1-2 minutes, allowing the flavors to meld.
- Remove from heat. Serve hot, garnished with sliced green onions and sesame seeds.
Notes
- You can use ground chicken or beef instead of pork or turkey.
- Adjust the amount of sriracha to your spice preference.
- For extra vegetables, add shredded carrots or bell peppers with the coleslaw mix.
