Description

This flourless chocolate cake is rich, decadent, and naturally gluten-free. It’s a simple recipe that brings pure chocolate joy to any occasion.


Ingredients

  • 8 ounces bittersweet or semisweet chocolate, chopped
  • 1 cup (2 sticks) unsalted butter, cut into pieces
  • 6 large eggs, separated
  • 1 cup granulated sugar, divided
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Optional: Powdered sugar for dusting


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan. You can also line the bottom with parchment paper.
  2. In a heatproof bowl set over a saucepan of simmering water, melt the chopped chocolate and butter together. Stir until smooth, then remove from heat and let it cool slightly.
  3. In a separate large bowl, beat the egg yolks with 1/2 cup of the granulated sugar until pale and creamy. Stir in the vanilla extract.
  4. Gently fold the melted chocolate mixture into the egg yolk mixture until just combined.
  5. In another clean bowl, beat the egg whites with the salt until soft peaks form. Gradually add the remaining 1/2 cup of granulated sugar and continue beating until stiff, glossy peaks form.
  6. Gently fold about one-third of the beaten egg whites into the chocolate mixture to lighten it. Then, carefully fold in the remaining egg whites until no streaks remain. Be careful not to overmix.
  7. Pour the batter into the prepared cake pan and spread it evenly.
  8. Bake for 30-35 minutes, or until the edges are set and a toothpick inserted near the center comes out with moist crumbs attached. The center may still be slightly soft.
  9. Let the cake cool in the pan for 10-15 minutes before inverting it onto a wire rack to cool completely.
  10. Dust with powdered sugar before serving, if desired.

  • For an even richer flavor, use a good quality dark chocolate.
  • Ensure your eggs are at room temperature for the best volume when whipping the whites.
