Description

Make a rich, dense, and intensely chocolatey torte that is naturally gluten-free. This recipe yields a velvety dessert perfect for special occasions.


Ingredients

  • 8 ounces bittersweet chocolate, chopped
  • 8 ounces unsalted butter, cut into pieces
  • 1 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 4 large eggs, separated
  • 1 teaspoon vanilla extract
  • Powdered sugar, for dusting


Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease and line the bottom of an 8-inch springform pan with parchment paper.
  2. Place the chopped chocolate and butter in a heatproof bowl set over a saucepan of simmering water. Stir until completely melted and smooth. Remove from heat.
  3. Whisk the granulated sugar, cocoa powder, and salt into the melted chocolate mixture until combined.
  4. Beat in the egg yolks one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. In a separate clean bowl, beat the egg whites until stiff peaks form.
  6. Gently fold one-third of the beaten egg whites into the chocolate mixture to lighten it. Then, fold in the remaining egg whites until just combined. Do not overmix.
  7. Pour the batter into the prepared springform pan.
  8. Bake for 30 to 35 minutes. The center should look set but still slightly soft.
  9. Let the torte cool completely in the pan on a wire rack. The center may sink slightly as it cools.
  10. Once cool, carefully remove the sides of the springform pan. Dust the top with powdered sugar before slicing and serving.

Notes

  • For a smoother texture, use high-quality chocolate with at least 60 percent cacao.
  • Chill the torte for at least 2 hours before serving for the densest texture.
  • You can substitute cocoa powder with espresso powder for a deeper chocolate taste.
