Description

A simple recipe for pan-frying cabbage until tender-crisp, using rendered bacon fat for flavor and topping it with crispy bacon pieces.

Ingredients

Scale
  • 1 medium head green cabbage (about 2 lbs)
  • 6 slices thick-cut bacon
  • 1 small yellow onion, thinly sliced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon apple cider vinegar (optional)

Instructions

  1. Cut the bacon into 1-inch pieces. Place the bacon pieces in a large, heavy-bottomed skillet (12-inch recommended) over medium heat.
  2. Cook the bacon, stirring occasionally, until it is fully crisp. Remove the crispy bacon pieces with a slotted spoon and set them aside on a paper towel-lined plate. Leave the rendered bacon grease in the skillet.
  3. While the bacon cooks, remove any tough outer leaves from the cabbage. Cut the cabbage in half, remove the core, and thinly slice the cabbage into ribbons.
  4. Add the sliced onion to the hot bacon grease in the skillet. Sauté for 3 to 4 minutes until the onions soften.
  5. Add the sliced cabbage to the skillet. Sprinkle with salt and pepper. Toss to coat the cabbage in the bacon grease.
  6. Cook the cabbage over medium-high heat, stirring frequently for the first 5 minutes to wilt it down. Reduce the heat to medium.
  7. Continue cooking for 10 to 15 minutes, stirring occasionally, until the cabbage reaches your desired tenderness. You want some edges to brown slightly for better flavor.
  8. If using, stir in the apple cider vinegar during the last minute of cooking.
  9. Remove the skillet from the heat. Stir in half of the reserved crispy bacon pieces.
  10. Serve the fried cabbage immediately, topping each portion with the remaining crispy bacon.

Notes

  • For extra flavor, add 1/2 teaspoon of garlic powder along with the salt and pepper.
  • If you do not have enough bacon grease, add 1 tablespoon of butter or oil before adding the onions.
  • If you prefer softer cabbage, cover the skillet for the last 5 minutes of cooking time.
