Description

This recipe makes a hearty, deconstructed version of traditional Golumpki (stuffed cabbage rolls) as a simple stovetop soup.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 pound ground beef or a mix of ground beef and pork
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 head green cabbage (about 3 pounds), thinly sliced or chopped
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 4 cups beef broth
  • 1/2 cup uncooked long-grain white rice
  • 1 tablespoon brown sugar
  • 1 tablespoon white vinegar
  • 1 bay leaf

Instructions

  1. Heat the olive oil in a large Dutch oven or stockpot over medium heat. Add the chopped onion and cook until soft, about 5 minutes.
  2. Add the ground meat, salt, and pepper to the pot. Cook, breaking up the meat, until browned. Drain off any excess grease.
  3. Stir in the minced garlic and cook for 1 minute until fragrant.
  4. Add the sliced cabbage, crushed tomatoes, tomato sauce, beef broth, uncooked rice, brown sugar, vinegar, and bay leaf to the pot. Stir everything together well.
  5. Bring the soup to a boil, then immediately reduce the heat to low, cover the pot, and simmer for 45 to 60 minutes, or until the cabbage is tender and the rice is fully cooked. Stir occasionally to prevent sticking.
  6. Remove and discard the bay leaf before serving. Taste and adjust seasoning if needed.

Notes

  • For a tangier flavor, increase the white vinegar to 1 1/2 tablespoons.
  • If you prefer a thicker soup, remove about 1 cup of the soup mixture near the end of cooking, mash the cabbage slightly, and return it to the pot.
  • You can substitute the stovetop method with a slow cooker by browning the meat first, then combining all ingredients in the slow cooker and cooking on low for 6-8 hours.
