Description

These are traditional Italian cookies made with ground nuts rolled into a simple dough.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup ground walnuts or almonds
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • Powdered sugar for dusting


Instructions

  1. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, ground nuts, baking powder, and salt.
  3. In a separate large bowl, cream together the softened butter and sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a stiff dough forms.
  6. Roll the dough into small logs, about 3 inches long and 1/2 inch thick.
  7. Place the logs on the prepared baking sheets, leaving about 1 inch between them.
  8. Bake for 12 to 15 minutes, or until the edges are lightly golden.
  9. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
  10. Once cool, dust generously with powdered sugar.

Notes

  • You can substitute almonds for walnuts, or use a mix of both for a different flavor.
  • For a richer flavor, toast the nuts lightly before grinding them.
