Make your classic banana bread extraordinary with a rich, beautiful mocha swirl. This recipe adds a coffee-chocolate kick to your favorite comfort bake. You get the moist texture you love with a fun, layered surprise.
Ingredients
Scale
- 3 ripe bananas, mashed
- 1/3 cup melted butter
- 3/4 cup granulated sugar
- 1 large egg, lightly beaten
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup strong brewed coffee, cooled
- 2 tablespoons cocoa powder
- 1/4 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a standard loaf pan.
- In a large bowl, mix the mashed bananas, melted butter, sugar, egg, and vanilla extract until combined.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Add the dry ingredients to the wet ingredients. Mix until just combined; do not overmix.
- Pour about two-thirds of the batter into a separate bowl.
- Whisk the cooled coffee and cocoa powder into the smaller portion of batter until smooth. This is your mocha batter.
- In another small bowl, mix the powdered sugar with 1 teaspoon of water to form a thick drizzle (this is for extra swirl richness).
- Pour the plain batter into the prepared loaf pan.
- Drizzle the mocha batter evenly over the plain batter.
- Drizzle the thin powdered sugar mixture over the top of the mocha batter.
- Take a butter knife and gently run it through the batters in a figure-eight or ‘S’ pattern to create the swirl effect.
- Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
- Use very ripe, spotty bananas for the best flavor and moisture.
- Do not overmix the batter once the flour is added; this keeps your bread tender.
- If the top browns too quickly during baking, loosely tent it with aluminum foil halfway through.
- For a stronger coffee flavor, use instant espresso powder mixed with the liquid rather than brewed coffee.
