Description

Make soft, chewy, restaurant-style naan bread quickly on your stovetop without using yeast. This simple recipe yields fluffy flatbread perfect for serving with curry.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 cup plain yogurt (full fat recommended)
  • 1/4 cup milk (warm)
  • 2 tablespoons oil or melted butter, plus more for brushing

Instructions

  1. In a large bowl, whisk together the flour, baking powder, sugar, and salt.
  2. Add the yogurt and warm milk to the dry ingredients. Mix until a shaggy dough forms.
  3. Turn the dough onto a lightly floured surface and knead for 5 to 7 minutes until the dough is smooth and elastic.
  4. Divide the dough into 6 equal pieces and roll each piece into a ball. Cover the balls and let them rest for 10 minutes.
  5. Heat a heavy-bottomed skillet or cast-iron pan over medium-high heat until hot. Do not add oil to the pan.
  6. Working with one ball at a time, roll it out into an oval or teardrop shape, about 1/8 inch thick.
  7. Place one rolled naan onto the hot, dry skillet. Cook for about 1 to 2 minutes until bubbles form on the surface and the underside has brown spots.
  8. Flip the naan and cook the second side for about 1 minute until lightly browned. If you see large bubbles, gently press them down with a spatula to help the bread cook through.
  9. Remove the cooked naan from the skillet and immediately brush the top surface with melted butter or oil.
  10. Repeat with the remaining dough balls, stacking the cooked naan and covering them lightly to keep them warm and soft.

Notes

  • For Garlic Naan, mix 2 cloves of minced garlic with 2 tablespoons of melted butter and brush this mixture onto the naan immediately after cooking.
  • If your dough seems too dry, add milk one teaspoon at a time. If it is too sticky, add flour one teaspoon at a time.
  • Use a cast-iron skillet for the best heat retention and browning results.
