Description

Prepare flavorful shrimp indoors by using your oven’s broiler to mimic grilling. This recipe uses a simple garlic herb marinade and finishes with a bright lemon butter sauce.

Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes
  • Salt and black pepper to taste
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat your oven broiler to high. Position an oven rack about 6 inches from the heat source. Line a baking sheet with aluminum foil for easy cleanup.
  2. In a medium bowl, combine the olive oil, minced garlic, oregano, thyme, red pepper flakes, salt, and pepper.
  3. Add the shrimp to the bowl and toss until they are evenly coated with the marinade.
  4. Arrange the shrimp in a single layer on the prepared baking sheet. Do not overlap them.
  5. Place the baking sheet under the broiler. Broil for 2 to 3 minutes per side. Watch carefully, as broiling cooks very quickly. Shrimp are done when they turn pink and opaque throughout.
  6. While the shrimp broil, prepare the drizzle: In a small bowl, whisk together the melted butter and fresh lemon juice.
  7. Remove the shrimp from the oven. Drizzle the lemon butter mixture over the hot shrimp and sprinkle with fresh parsley.
  8. Serve immediately.

Notes

  • For a smoky flavor, add 1/4 teaspoon of smoked paprika to the marinade mixture.
  • If you do not have fresh parsley, use 1 teaspoon of dried parsley instead.
  • Use large or jumbo shrimp for the best results when broiling, as smaller shrimp cook too fast.
