- 1 premade pie crust or homemade dough
- 4 cups mixed summer berries (strawberries, blueberries, raspberries, blackberries)
- 1/4 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1 tablespoon lemon juice
- 1 large egg, beaten
- 1 tablespoon coarse sugar (optional, for sprinkling)
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a large bowl, gently combine the mixed berries, granulated sugar, flour, and lemon juice.
- Roll out the pie crust on the prepared baking sheet into a rough circle, about 12 inches in diameter.
- Spoon the berry mixture into the center of the dough, leaving a 2-inch border around the edges.
- Gently fold the edges of the dough over the berry filling, overlapping the folds as you go.
- Brush the beaten egg over the folded crust. Sprinkle with coarse sugar, if desired.
- Bake for 30-35 minutes, or until the crust is golden brown and the filling is bubbly.
- Let cool slightly before serving.
Notes
- You can use any combination of berries you like.
- Serve warm with a scoop of vanilla ice cream or whipped cream.
- If using frozen berries, thaw and drain them first.
